If, of course, the minimum of 5 classes (or whatever) are taken. Or do only traditional fall/spring semesters count as "full time semesters?"

Your summer semester is also a full-time semester. I cannot see any reason why it would not count.
If you still aren't sure, you could always contact admissions to see whether they treat summers any differently.

If you are in fact taking 5 courses (a full courseload), than it should count. However, I know many universities don't allow students to take that many courses during the summer, so make sure to check with your school!
