Can your third reference be essentially from anyone you have worked with even if not in an animal setting? I did research with a Doctor (Not a vet) in a hospital before and i just wanna make sure he would be okay to use.

yes totally fine so long as they are otherwise acceptable (i.e no family, close friends, etc)
