Hello!
I am planning on applying to OVC this year and just wanted to confirm that since I am taking a full year course (extends from Fall 2021-Winter 2022), OVC will not look at my Fall 2021 and Winter 2022 semester. Would my last two full-time semesters therefore be Fall 2020 and Winter 2021 (I took all 0.5 courses and a full course load with 60% upper year courses)? Thank you!

You should email admdvm@uoguelph.ca for the most accurate response
"A course that runs the full year will have the credit weight divided equally and half applied to each of the two semesters in which the course is taken." - this is listed on the academic requirements.
You don't mention how many courses you are taking in the current fall semester and next winter semester, but if you are taking a full course load then these semesters will still count. i.e. if you have a minimum of 2.50 (or 15.0 if you use the 3.0/6.0 system) then it counts.

Yup that's right.
They won't look at your winter 2022 grades either way, since they come out after the deadline to submit transcripts (March 1st).
But if your Fall 2021 semester doesn't have 2.5 credits of grades, it won't be used as one of your 2 most recent semesters. So because one of your courses goes the full year, its grade won't be released by March 1st and your semester won't count.
Always good to try and do your best though! I hope you get in this year, but if you don't, your Fall 2021 will become valid next year once the full year course grade is released.

So because one of your courses goes the full year, its grade won't be released by March 1st and your semester won't count. The semester will still count as full time even without the final mark from the year-long course since they are still studying in a full time semester. As long as the year long course is worth 1.0 credits (or double a single course).
