In my undergrad I took ANSC 3080 (Agricultural animal physiology), and more recently took BIOM 3200 (Human physiology). There is no overlap in terms of prerequisites, but does anyone know if there is significant content overlap in these courses that might prevent me from being able to use BIOM 3200 as a prerequisite? Any help would be appreciated!

I'd guess those courses are too similar... they're both physiology of mammals, they cover the same systems, they're at the same level and have the same prerequisite... Was there a specific reason you took both?
For me I had to submit my courses for approval cuz I did a year at a different school. I had to submit the syllabus for every course I wanted to use and I doubt they would have accepted those together...
But maybe since you're at guelph and you don't have to go through the approval process you might be ok... I would email them and check...
